    One of my favorite stand by dishes when traveling India is mattar paneer. Since I don’t eat meat while in the country, generally one dish per meal includes paneer in order to get some protein. This dish blends a creamy Indian spiced sauce with peas and paneer. Paneer is a non-melting cheese made by curdling heated milk with lemon juice or other food acid.
