While traveling the northern states of India, malai kofta was a repeat order by my friend Rakesh. He really enjoyed it yet my tastes left me not wanting more. On my recent trip to South India the opportunity presented itself to give this dish a second try. Amazing! What had I been thinking? A simple to make, flavorful, rich entree had been rediscovered.
